Amy has been after me for weeks to make an apple cake. On at least 5 occassions I was missing at least one ingredient. Today, the stars aligned, the Earth tilted just so and I made it. Worth the wait. The recipe I used is here (I diced instead of slicing my apples) which is more akin to this recipe (I did use granny smith apples). I'm definitely a better cook than a baker. I find that baking agitates me because it requires far too much precision and if you've ever seen my kitchen after I cooked something – well you know precision is not the name of my game. Still, this cake was worth it – perfect with a cup of tea for breakfast or lunch or pretty much any time of the day.
